사랑하는 연인들이 많군요
사랑하다 is a verb that means to love. Here, the verb stem 사랑하 is changed into the descriptive form +는 to describe the noun that comes afterwards - 연인 [lovers/couples]. Attached to 연인 is first, the particle -들 which emphasizes that there are multiple couples, and there is 이 which makes the 연인들 the subject of the verb to come - 많다 [to be a lot, many]. You can think of the subject as the one TO DO the verb, but since you can't DO many, it is the thing that IS many. So, 사랑하는 연인들이 많다 means that there are a lot of couples who are in love (doing love). The added grammatical structure -군요 is just a way of expressing surprise about something, or a fact just learned. 알 수 없는 친구들이 많아요
알다 means to know, and attached to the verb stem (알) is the grammatical structure 을 수 없다 which means CAN'T. Literally, 수 [method/way] 없다 [to not exist]. Then, added to that grammatical structure's verb stem 을 수 없 is +는 which changes it into a descriptive form describing 친구 [friend] + 들 (expressing multiples friends). 알 수 없는 친구들 means unknown friends, or friends who can't know (have no way of knowing). 이 makes 친구들 the subject of 많아요 - which is in present tense this time (많 - 다 + 아요). So, there are a lot of friends who have no way of knowing - a lot of friends who can't know.
흩날리는 벚꽃 잎이 많군요
흩날리다 means to flutter, scatter. It is changed into the descriptive form +는 (흩날리 + 는), which is describing 벚꽃 [ cherry blossom] 잎 [leaves/petals]. +이 subject marker, again marking 벚꽃 잎 as the subject of 많군요. So, there are many scattering/fluttering cherry blossom leaves (I've realized).
좋아요
좋다 [to be good] is simply transformed into the present tense form (좋 - 다 + 아요) meaning it's good! Or, great! Or, I like it!
